Muzaffarpur in Bihar is our latest addition of centers and is the 92nd center of Saaol. On 15th December, 2019 Dr. Bimal Chhajer inaugurated this center and also consulted many patients. This will be our first center in North Bihar and fourth in the state of Bihar. Our next center to be opened is Hosiyarpur in Punjab on 12th January, 2020. Dr. Chhajer will travel to Punjab on this occasion. The next centers in the queue are Virar in Maharashtra, Bulandshahr in UP, Pathankot in Punjab and Jammu in J&K.

Saaol will step into 25th Anniversary year on 1st January, 2020 and we are preparing for celebrating this occasion with many events and functions.We are thankful to all our supporters for the trust they had on our organization. The first event is launching of this brand new Digital Magazine. Dr. Bimal Chhajer was a key speaker in a conference in AIIMS, Bhubaneswar on 8th December, 2019. He shared his secrets of success and how simple medical knowledge can be imparted amongst the public without distorting the medical facts. Saaol’s concept was very much appreciated by the 200 doctors and researchers present during his talk.

This talk in the prestigious AIIMS was a sign that main stream allopathic doctors are now taking interest in our system. Two one-day training camps were organized in Kolkata (on 7th December) and Delhi (on 22nd December) during the last one month. Both were houseful. Let me wish you all a happy and prosperous New Year 2020. For Saaol (Science and Art of Living) this year is also very special as we shall be completing our 25 years of successful existence. This is our Silver Jubilee year. I had decided to quit AIIMS in 1994 and registered a company called Saaol Health Pvt Ltd in that year. In September 1995, I took the final call and took the plunge into a field of my passion – where I wanted to educate people on correct lifestyle and supplement their treatment with Modern Medical Drugs. We took a small basement on rent and started our clinic on 29th September, 1995.

Since then much water has flown in the river of Ganges and we not only persisted against the Mainstream Cardiologists and surgeons but also progressed steadily. We proved ourselves with our results, we developed recipes, wrote books, brought out magazines, travelled all across India and the world to create awareness, we recorded videos and regularly released in the social media, our patients also spread the word of mouth – and we became successful. The numbers grew, we started treating more and more patients and when they went home they sent more. Emami Group became our permanent sponsors as their chairman followed us for long 24 years from 1996.

We kept on adding more non invasive treatments like ECP or Natural Bypass, Detox Therapy; we produced low cost medicines for our patients, we started advocating CT Coronary Angiography instead of Invasive Catheter Angiography.

People liked them and we kept on adding people. Numerous medical doctors, two DM Cardiologists also joined our treatment along with Actors, Businessmen, Politicians, Executives, Bankers, and people from every sphere of life took our treatments successfully. Today we can boast about our success. We have more than 90 centers across the country and abroad; more than 2.5 lac successful patients; more than 70 books to our credit; 500 video talks in You Tube and FaceBook and more than 50 million views.For all these – I must thank all our patients, readers, followers, supporters and colleagues. Food Chapter | Zero Oil Suji Halwa

INGREDIENTS (PER SERVING)

1. Suji - 50 gm
2. Sugar - 35 gm
3. Water - 100 ml
4. Cardamom - 1

METHOD OF PREPARATION

1. Pour Suji in a pan and roast it until golden – brown
2. Reduce flame to medium, add Sugar and mix it with spatula. Cook until Sugar melts. 3. Stir and cook to avoid any lump formation.
4. Now slowly add water and mix by stirring constantly. Cook on low heat till all the water is absorbed by Suji and Suji is softened.
5. Garnish with cardamom. You can add some Kesar on it.serve hot

Zero Oil Besan Pakora
Ingredients

Bengal Gram Flour (Besan) - 4 tablespoon, Spinach - 4 tablespoon (chopped), Salt and Chili to taste, You can add other spices according to your taste.

Method

1. Make a thick paste with Bengal Gram Flour, Spinach, Salt and Chili in a bowl.
2. Keep an Idli stand for steaming and pour a spoonful of paste in each Idli compartment.
3. Steam for 5-7 minutes or till Pakoras are done.
4. Serve hot with coriander or mint chutney. You can add these Pakoras to the Kadhi.

1. Introduction: Whenever we call Salt as a unhealthy food it is because of it’s Sodium content. Some Sodium is required by the body but excess Sodium leads to water retention – thus increase High Blood Pressure which ultimately lead to Heart Disease and Stroke (the largest Killer diseases). High BP is directly responsible for 29% of all Strokes and 24% of all Heart Attacks in India according to Indian Council of Medical Research (ICMR). High BP accounts for approximately 10.6% deaths in India.
2. Salt – how it leads to High Blood Pressure: Human body removes extra Salt through the kidneys. But if the Salt consumption is high the kidney can not excrete all the Salt. As Salt attract water – the volume of the blood increases and this in turn increases the Blood Pressure. The walls of the Blood Vessels and Arteries react to this pressure and get thicker. The heart has to pump against this increased pressure – the muscles of the heart also becomes thicker and ultimately Heart Disease results.
3. Possible effects of Salt intake reduction: There are scientific studies which conclude that reducing the daily Salt intake to 5-6 grams per day decreases the mean population Blood Pressure and the associated risk of Cardiovascular events. It is estimated that reduction of 6 grams per day Salt intake can reduce Stroke by 24% and Coronary Heart Disease by 18%.

Need of Salt/Sodium for our body

1. There are scientific studies which conclude that reducing the daily Salt intake to 5-6 grams per day decreases. Salt is an important part of the body fluids. It is responsible for maintaining our normal Blood Pressure. It is a major player in body’s electrolyte balance.
2. There are scientific studies which conclude that reducing the daily Salt intake to 5-6 grams per day decreases. Sodium is an essential nutrient and body can not produce it. It plays vital role in the regulation of body fluids that transports Oxygen and Nutrients. It creates osmotic pressure which helps in oxygen exchange in tissue level. It also helps in Acid-Base balance. It is a principle component of body’s internal environment – the Extra Cellular Fluid. It also helps in transmission of Nerve Impulses. It also helps in the transmission of signals in and out of brain. We cannot live without Sodium. Without Sodium our brain function will also be affected adversely. .

Salt intake in India and Abroad

1. There are no reliable data existing in this regard. An ICMR survey in 13 states in 1986-88 shows an adult consumes 13.8 grams Salt per day. National Institute of Nutrition (NIN), Hyderabad – which used to recommend 10gm Salt intake per day in 2010 reduced the recommended level to 5-6 grams. Latest data shows that India’s Salt intake is 11gms per day. According to few studies, added Salt is the main source of Salt intake in Indians – about 83-87%. Rest of the Salt comes from Meat, Fish, Dairy, Bread and Bakery, Fruits and Vegetables. In the high income group who eat more processed food the Salt intake in mainly from processed food while most of the low income group add Salt while preparing food. India has committed to reduce intake of Salt by 30% by 2025 to the World Health Organization.
2.Urbanization in India is one of the causes of high Salt intake. When people shift to cities they have a proneness to eat in the restaurants, eat processed food. The home food goes on as it is. Ultimately the Salt intake increases.
3. Generally many foods contain some Sodium inside them. Most of the processed foods add a good amount of Sodium during preparation.
4. Most processed foods have Sodium but in the USA the highest source of Sodium in processed food comes from - Breads & Rolls; Pizza; Sandwiches; Processed Meat; Packaged Soups; Mexican foods like Burritos and Tacos.
5. Processed food is responsible for 77% of Salt intake of US population as they eat a lots of processed food like Cured Meat, Bread, Pizza, Poultry, Soup and Restaurant Foods. Most Americans end up eating 3400mg of Sodium instead or recommended 2300 mg per day.

Facts about Salt and Sodium

1. Salt is eaten because of its taste – it is one of the basic tastes that our tongue can detect besides – Sweet, Sour, Bitter and Pungent (Chilli).
2. Salt is basically Sodium Chloride (NaCl). Salt crystals are cubic in shape and normally look white. Salt in its natural form is available as Rock Salt or Halite. Salt is present in Sea Water is vast quantities – which contain 3.5 grams per 100 ml.
3.Table Salt is a combination of Sodium and Chloride – weight wise it is 40% Sodium and 60% Chloride.
4.One Teaspoonful Salt (little above 5 gms) have 2300 mg of Sodium. US government recommends and intake of 2300mg Sodium per day whereas WHO recommends 2000mg per day which is 5 gms of Salt. American Heart Association says 1500mg Sodium is best for the heart.

Manufacturing of salt - Salt available in the market can have three sources

A. Drying of Sea Water: Sea Water, which has 3.5% Salt is taken in shallow ponds and water is evaporated in the dry sun and the Salt is obtained. But it requires dry climate and rain fall can spoil the process. This process requires lots of human effort.
B. Salt Brine: Below the earth or below the ocean Salt deposits are dissolved in water and high concentration of Salt water is obtained. This water is then evaporated to create Salt. This method is cheap and has a high yield. This is becoming more common these days.
C. Rock salt: This is also called Halite. Such Salt is present under the earth and mined for use. This Salt contained lots of other minerals and impurities. These are probably ancient sea water which got dried up millions of years back.

Types of salt

1. Table Salt or Refined Salt: contain about 97-99% Sodium Chroride. To make it free flowing Magnesium Carbonate or Sodium Alumino Silicate is added in many cases.
2. Sea Salt or Kosher Salt: also contain 40% Sodium by weight. But it also have Magnesium, Potassium and Calcium in small amounts.
3. Rock Salt/Pink Rock Salt - called Sendha Namak: This is a kind of Rock Salt and has a pink tinge. This has less Sodium content and also contain other nutrients like Potassium, Copper and Calcium. This is a healthier variety of Salt.
4. Kala Namak or Himalayan Black SaltIt is a special type of Indian Volcanic Mineral Salt. It has a distinctive sulfurous smell. Traditionally Rock Salt is processed by chemicals which transform some of the sodium into pungent hydrogen sulfide and sodium sulfide. In this process ayurvedic herbs like Harad, Aamia, Bahera, Saji is added in the Rock Salt with Charcoal. This Salt is often used in Intestinal Diseases – like Constipation, Flatulence, Heartburn, Bloating, Indigestion, poor Eye Sight and Hysteria in Indian Traditional System. This Salt has less Sodium content. In India this Salt is extensively used in Chutneys, Curds, Pickles, Salads and Fruits. Sometimes it is used in cold drinks in summer times.
5. Low Sodium Salts: These days a lot of Low Sodium Salts are available in the market. They mix Potassium Salt and reduce the Sodium. Many claim that the Sodium is 70% less than Common Salt.
6. Iodized Salt: Iodine is a micro nutrient which is needed to make Thyroid Hormones in our body. Deficiency of Iodine thus leads to Goitre or Hypothyroidism - which is a common disease. In Children it leads to Cretinism. Thus many countries has made it compulsory to add Iodine in processed Salt – which has substantially reduced the incidence of Hypothyroidism. Usually Potassium or Sodium Iodide is added in the processed Salt.
7. A Double Fortified Salt has Iron with Iodine and can be used in preventing Anemia which is very common in many countries. Folic Acid (Vitamin B9) can also be added in some cases.
8. One tablespoon of Soya Sauce (15ml) has as much as 1000mg of Sodium – which is equivalent to 2.5 gram of Salt.
9. Baking Soda: Sodium Bi Carbonate also has lots of Sodium. It is used in Bread and baked foods.

Steps to reduce Salt intake in the body

1. Do not sprinkle Salt on Salads, cut Fruits and Curd. Enjoy their natural taste.
2.While cooking try to reduce the addition of Salt gradually.
3. Soya Sauce, Salad Dressings, Ketch up, Pickles and Papad has a lot of Salt/Sodium. Cut down their usage.
4. Baking Soda, Baking Powder, Mono Sodium Glutamate (MSG) should be used less and less.
5. Do not add Salt in dough of Chapati or Rice.
6. Switch from Salted Snacks and Namkeens to Fruits and Salads.
7.Avoid Salted Chips, Salted Biscuits, Cheese and Salted Dairy Products.
8. Eating Fruits and Vegetables has high Potassium which lessens the negative effects of Sodium.
9. Take Steamed, Baked, Boiled, Grilled and Roasted foods which have less Sodium.
10.Shift to Low Sodium Salt (LONA, Suffola Salt). Take extra amount of water – which helps to flush out extra Sodium from the body.

Hyponatremia (Low Blood levels of Sodium in the blood)

This is a rare but possible condition when the the blood levels of Sodium goes below 135micro mol/litre. This may be caused by excessive reduction of Salt intake while managing Heart Failure or Congestive Cardiac Failure. It affects the brain adversely. Such patients may feel lethargic, sluggish. It may also lead to muscle twitches, headache, irritability, decline of cognitive senses, seizures, loss of consciousness and even coma. Such condition can be also caused by Diarrhoea, Vomiting, Burns, Intestinal Obstruction, Addison Disease. The treatment is usually supplying more Salt to the body orally or intravenously.

Uses of Salt for Health Benefits

Excess Salt intake is bad of health but Salt is also very essential for maintaining our body. Since we are talking about Salt – it is often used for good health and good purposes. 1. Sodium Chloride (NaCl) is a common Intravenous Fluid called Saline. It is used to increase Blood Pressure in cases of Low Blood Pressure due to diarrhea and vomiting.
2. For those who have low Blood Pressure are often recommended high Salt intake.
3. Salt Solution( 2-3%) in warm form is used as a gurgle in throat congestion cases. It reduces congestion of the throat mucous membrane.
4. Salt Solution (Hypertonic Solution) is used in the Yogic treatment of Jalneti to reduce Congestion of Sinusitis and Headaches.
5. Isotonic Sodium Chloride Solution (Salt Water 0.9%) is also used as a Eye wash and for dry eyes.
6. Salt Water Bath is also commonly used in Naturopathy and Detoxification. For Dry Skin, Skin Infections Salt Water Bath of 30 minutes are often used in Spas.
7. Salt inhalation is used in cases of Asthma, Bronchitis and Sinusitis.
8. Salt Water application on the skin - in cases of Burns, Wounds, Insect Bites, Herpes, Open Wounds are often washed with 1% Salt sterilized solution.
9. Salt is now often added in tooth pastes to improve dental and gum health.
10. High amount of Salt is also used as a preservative as Bacteria can not grow in very high Salt environment. Most pickles have high Salt and last for a long time.
